Just a quick post today, as I seem to have fallen a bit behind.
I thought I would share my Nanaimo Bar recipe before I forgot.
Nanaimo Bars- Company's Coming 150 Delicious Squares
Bottom Layer
1/2 cup margarine or butter
1/4 cup sugar
1/3 cup cocoa
1 large egg beaten
1 3/4 cup graham cracker crumbs
3/4 cup fine or medium coconut
1/2 cup finely chopped walnuts
Middle layer
1/2 cup softened butter or margarine
3 tbsp milk
2 tbsp Vanilla custard powder (I use instant vanilla pudding)
2 cups icing (confectioner's) sugar
Top layer
2/3 cup semisweet chocolate chips
2 tbsp butter or margarine
Bottom layer
Melt first three ingredients i the top of a double boiler or in a heavy pot. Add beaten egg and stir to cook and thicken the mixture. Remove from heat and stir in remaining ingredients. Press firmly into ungreased 9 X 9 pan.
Second layer
Cream butter, milk, custard powder and icing sugar together in bowl, then beat until light. Spread over bottom layer.
Top layer
Melt chocolate chips and butter over low heat. Cool. When cool but still runny spread over second layer. Chill in fridge. Cut into bars.
I will admit to doubling this recipe when I make it as this disappears very quickly here.

I have the same cookbook though it's packed in a box in the garage for now. I've never made the Nanaimo bars as my daughter is not a fan of coconut. Which means I'd have to eat most of it, and that would not be a good thing. :)
