Menu Monday

 


Holy week has arrived and what will be a very busy week of cooking and preparing meals, treats, and getting ready for Kris to arrive. This will be the first time in two years that Kurt isn't here for the holiday. I do hope he enjoys his trip with his students.

Monday
Chicken Cordon Swiss, leftover potatoes made into 2 patties, leftover mixed veggies, and leftover coleslaw. Trying to keep the fridge as clear as possible.

Tuesday
The last package of leftover pork roast made into a casserole. Served with a salad.

Wednesday
The last of the battered fish, fries, and leftover salad. 

Thursday
Leftover pork casserole, but if not enough of that I have a container of potato soup and will make some sandwiches to go with.

Friday
Breakfast for supper. We will have pancakes.

Now the next two days will be kind of mixed up. It all depends when Kris will be heading home. If he plans on leaving on Sunday our Easter meal will be on Saturday. If he is going to leave on Monday our Easter meal will be on Sunday.

Easter Meal will be Turkey, stuffing, mashed or riced potatoes, gravy, salad, peas, pickles, cranberry sauce, and some cheese. Dessert will be pie of some sort.

The meal we will have when we don't have the Easter meal will be Sweet and Sour Pork Ribs, rice, and salad. 

So there you have our meals for another week.

  1. I love breakfast for dinner! I bet you're looking forward to Friday too :-) I've got to work on clearing the fridge. I'll start biscuits on Friday since I am protesting on Saturday. I've got to come up with a creative Easter basket idea too.

  3. Yes, breakfast for dinner is delicious. Your Easter dinner sounds delicious. I have a couple of turkeys in our freezer, so I could make one for Easter dinner too.

  6. We're big fans of breakfast for dinner and have it once a week. Last week was a breakfast bowl with homemade hash browns, eggs, bacon and cheese. This week is pancakes and sausage. It is such a versatile meal.
