The beginning of a new week and I am still using up leftovers from when the boys were here. I really did cook way too much, and I have to kind of space them out a bit.
Here is the menu for the week with a few nights of leftovers snuck in.
Monday
Roasted Chicken Legs (Back attached), creamed potatoes (used up the last of the very small potatoes and more of the cream). We had leftover salads for our veggie.
Tuesday
Leftover smoked hamburgers, fries and broccoli.
Wednesday
Leftover Stir Fry and Rice.
Thursday
Leftover Baked Spaghetti, and coleslaw.
Friday
Salmon casserole and leftover coleslaw.
Saturday
Steak, mashed potatoes, mixed veggies.
Sunday
Roast Chicken, roasted potatoes, roasted carrots.
I think this will be an excellent week of clearing out the fridge freezer. There are still I few leftovers like roast beef, ham, and turkey but they are easily used in recipes that make a new meal.

I love leftovers! Resident Chef always makes lots and we can have it for several nights and then whatever is left gets put in the freezer. This time of year he stocks up the freezer with lots of soups and stews that can be easily heated up if we happen to not be feeling up to cooking.
ReplyDeleteI am thinking chili this week. ISn't it funny how we cook way too much when the kids are home? Like we are trying to feed a threshing crew.
