Menu Monday

Since we were out of town at supper time yesterday we ate out. This doesn't cause much of a change in my menu plan, but we may be having leftover turkey instead of leftover chicken tomorrow... Still it is poultry and enables me to clean out my fridge freezer a bit more.

Monday

Sweet and Sour Ribs with rice and sliced cucumbers (going to be lots of  cukes over the next week).

Tuesday

Leftover chicken or turkey (depends on what is in the freezer needing to be used). I plan on making this into a casserole or perhaps a large pot pie.

Wednesday

Leftovers from Monday (made a big batch today especially for the leftovers). Having sliced cucumbers once again.

Thursday

Leftover chicken casserole or pot pie. It's shopping and bill paying day so this will be quick and easy.

Friday

Veggie soup and grilled cheese or salmon salad sandwiches.

Saturday

Pork chops done on the BBQ, creamed potatoes, sliced cucumbers and cherry tomatoes (lots are almost ripe).

Sunday

Baked ham, mashed potatoes (or leftover potatoes from Saturday night), more of those sliced cucumbers and cherry tomatoes (perhaps a sliced green pepper as well).

The garden is slowly getting ready to harvest so I plan on making meals for the next couple of weeks that can be spread over two nights. Pickling, canning and freezing takes time away from cooking. Actually after processing the garden I just don't feel like cooking very much.

  2. The garden is yielding zucchini & carrots right now. My granddaughters enjoyed the raw garden beans last week. The deer have enjoyed the peas and the lily blooms!
    Monday - chicken thighs & sautéed zucchini
    Tuesday - zucchini & chicken alfredo
    Wednesday - chicken orzo soup (with garden carrots)
    Thursday - BBQ smokies & salad
    Fri - tortilla wraps for a road trip

Well, certainly after a day of canning and all that entails, one wants to get out of the kitchen...I've frozen some peas and bell pepper but not much else so far after the spinach of earlier in the summer/spring....planning to do some vegetable soup one energetic day soon...have the veggies in the freezer just need to add some rotisserie chicken and get it going. One thing I did last year is heat the jars in my crockpots so don't have to use the stove for that. I have two and can do 6 jars standing, maybe seven....then can set them back in after filling in order to put the pressure canner on later.
