Menu Monday

Brrr, this week is starting off as cold as the last one finished. We are supposed to get warmer temperatures starting on Wednesday, but I will believe it when it happens.

So in response to the cold weather we will be having some casseroles once again. This will more than likely mean leftovers for another meal or two, and hopefully some tinfoil dinners for Kris to take home with him the next time he visits.

Monday

Leftover ham. I am going to combine a package of leftover ham, the leftover rice, some mushrooms, a bit of broccoli and some grated cheese into a casserole for our supper. I will let you know how it turns out and if we enjoy it.

Tuesday

Switching with what I have listed with Wednesday.

Leftover chicken from Sunday's meal. This will more than likely be a pasta bake type of casserole. Served with coleslaw. Needs to be a quick one as it seems I am once more on Parish Council and there is a meeting tonight.... Can't get off this for trying it seems.

Wednesday

Soup and sandwiches. I am pulling the Turkey noodle soup from the fridge freezer to use up. Grilled cheese sandwiches will be served as well.

Thursday

Clean out the fridge night.

Friday

Tuna casserole served with some raw veggies and dip.

Saturday

Pulling out a package of leftover roast beef. I will probably make hot beef sandwiches, homemade fries and serve with some more coleslaw.

Sunday

Roast Pork, roasted potatoes, roasted carrots.

Lunches will be leftovers or sandwiches.

  1. Jackie, your Menu Monday inspires me to take stock and make a meal plan.
    I used up the garden onions & prepared a bag of small garden carrots last week for the chicken noodle soup. More of the carrots will get used in this week's soup & spicy chicken salad. Canned tuna is on sale this week (10 for $10) so some will go to the food bank & some will go into the pantry. In this cold weather, I can't seem to get enough pasta and potatoes. A roasted chicken was added to the menu last week that got used in grilled sandwiches for lunch & the soup. The last of it will be used this week.
    Monday - pan fried fish with lemon roasted potatoes & salad
    Tuesday - spicy chicken salad
    Wednesday - Mediterranean tuna noodle casserole (there's an open jar of artichokes to be used up)
    Thursday - tortellini soup
    Friday - vegetarian naan pizza

    1. You are so right Tania, menu planning keeps me from having to run to the store and pick something up. I always know what we are going to be eating and can take advantage of what is in the freezer, fridge and pantry.

  3. Mona, having a meal plan keeps me from wasting things. I used to have a real problem with this, but while I still waste once in awhile it is no where near as bad as it was.

  4. Jackie, you are so organized. I only know a day or two ahead what's on the menu. Yesterday I made chicken and dumplings. Today we had leftovers. Tomorrow Mac & cheese I guess.

    1. Mary I try and do up a monthly menu so that I can use up all those leftovers. I do a stock up shop on meat once every three or four months and can plan around what is still in the freezer every month.
