I was asked about my Lazy Perogy casserole recipe so I will share what I do to make this. I got the main idea from a Company's Coming Cookbook so the recipe is very simple, using ingredients that are easy to find.
Lazy Perogy Casserole
First you need to make your filling which is potatoes, and any kind of cheese you wish. Boil the potatoes until soft and mash adding shredded cheddar, cottage cheese (those are the ones used most often) until thoroughly mixed.
While the potatoes are cooking take lasagna noodles and cook those as directed. You need to cook as many noodles as to cover your casserole dish and to make a few layers of filling. Once cooked drain and run under cold water to stop the cooking.
Melt butter, place some in the bottom of the casserole so the noodles don't stick. Dice some onion and sauté in the remaining butter.
Place the noodles in the casserole, trim if needed. Put on a layer of filling, cover with noodles, make as many layers as you would like. I sometimes just make a layer of dry cottage cheese on top of the cheese and potato mixture. Top casserole with the butter and sautéed onions.
Bake at 350F for thirty minutes or so covered. Let sit for 5 mins and serve with sour cream.
Harvey actually likes these better than regular perogies. And I like that I can freeze them for use later.
