Menu Monday


 It is that time of the week once again, and while I will be using things up I will also be adding to the collection in the fridge and freezer. I hope to catch up with using all of the bits and bobs over the next few weeks and definitely through the month of July.

So, what are we eating this week.


Monday

Hotdogs, homemade pork and beans and I may just get my take on a Greek salad made as well.

Tuesday

Leftover pork roast made into a stir fry and served over rice. If any Greek salad left we will hopefully finish that off as well.

Wednesday

Chicken Vegetable Soup and tuna salad sandwiches.

Thursday

The leftover stir fry and rice. I will probably add the asparagus that will definitely need using by then.

Friday

Breakfast for supper. I will make pancakes.

Saturday

BBQ hamburgers, and tinfoil potatoes, along with another tossed salad I hope.

Sunday

Roast beef, mashed potatoes, gravy, and corn (no carrots left until I go shopping once again).


So there is what we will be eating during the week, and since it is supposed to be a rainy one, I may even get a bit of baking in as well. Really could use some cookies.

Fighting Against Rising Prices

 


Costs in Canada, and I believe around the world are rising and many are wondering how they will heat their homes, pay for medications or put food on the table. 

I know in Canada many of the food banks can not keep up with the growing requests. Some from what I have read have even shut down. 

Yet there are ways to save and even thrive during these hard times. We are lucky in that we, or rather I have always been frugal and over the last 15 years I have finally managed to get Harvey onboard. It took him retiring however to really get him onto the frugal path. 

One of the best ways to thrive in this uncertain time is to plan your menus and leftovers are always to be kept and made into another meal or two. I have gotten very good at the planning ahead and using things up. Today with a couple of slices of leftover roast beef I managed to make two containers of Beef Barley soup for us and a smaller container for Kurt (he will probably need more help than Kris right now). I still have 5 slices of roast beef left which will make sandwiches for a number of days. Out of a butternut squash that cost me $1.49, I made two containers of soup for the boys, and a large container for us. That large container will give us two meals stretched with crusty bread (made at home) or a sandwich. 

All bones from chickens, turkeys or ham are saved and I make broth from them. Saves not having to purchase broth from the store. One of these days I will try my hand at using peelings and such from veggies to make veggie stock. Just not too sure about doing so yet.

Eggs are still one of the least expensive forms of protein so breakfast for supper is awesome and very filling. 

There are lots of recipes out there for cleaning products and now that I have some spray bottles I will start doing that. Right now I have some orange peels in vinegar to make an orange cleaner. 

Purchase in bulk when you can. I do this for dish washing soap and save a few dollars. I also buy larger packages of hand soap, shampoo, and toothpaste (the ones that are two, three or four packages). These work out to be much less expensive than individual packages.

I try to never spend full price, but as all of you know, sometimes it is unavoidable but I always make sure to get the best deal that I can.

Old sheets become the backing for my quilts, sometimes even pajamas for either Harvey or I. Old clothing is cut into rags or into useable quilt fabric. I am even contemplating using those usable squares as fabric to sew clothing. I already make totes from some of them. 

Whatever jobs around the house we can do on our own we do. As we age however things are getting a bit tougher and so we will be searching for the best people to do the tasks we can't. 

As far as entertainment we only go to the live theater here in the summer. No movie theater for us, it is much too expensive. We do have a television package, but really it is the only source of entertainment we have and is well worth what it costs. 

Those are just a few of the ways we are saving money during this expensive time. I hope we can save even more as I figure out ways to live a bit more simply, frugally and thrifty.

Thrifty Tuesday

I do believe our first few days of October is more like winter than fall. This means I will be getting out my slow cooker or Instant Pot and making hearty meals for the next few days. This is a thrifty way of cooking as the power used for these two appliances is negligible when compared to the oven.

I finished sewing the  gift quilt together a few days ago. Since it was made of leftover scrap fabric and fabric salvaged from clothing it turned out to be a thrifty as well as useful gift.

I darned a couple of socks, fixed a seam or two and hemmed a pair of pants. Making clothing last longer just makes sense to me. Buttons and zippers have been saved from items of clothing I cut up to make more 4" blocks to use in quilting.

Meals are taking advantage of leftovers and bits and bobs of veggies in the fridge.

Thrifty Tuesday

I have already changed my menu for the week. It seems some smoked sausage got pushed back to the rear of the fridge and it really needed to be used.

There wasn't enough on its own for a meal for the two of us, but with the help of an onion, some green peppers from the garden and some thin slicing I managed to make a meal. Kind of a pepper and sausage saute. Filled us up perfectly and there is enough left for Hubby to have some for his lunch tomorrow.

This means that what I had packaged up and put in the freezer to use today will be used for another meal down the road (probably later this week).

I found some rather scratchy yarn a few weeks ago and as my bath puff is getting worn out I made some spa type cloths. I hope they lather just as well. If they do I may make a few more. I will post a picture of them later this week. I do know they should last much longer and cost just a fraction of what a new puff would cost.

From Supermoon to Mending

We had another Supermoon a few nights ago, and once again I thought I would try to photograph it.

I had mixed results.

This is one without using the zoom feature on my digital camera. Not too bad, so I decided to try zooming in.....


Not what I call the best picture. Harvey says it looks like I broke the moon..... Still it is a cool picture over all.

Today I spent part of the day refashioning some long sleeved t-shirts for Harvey into short sleeves. First I measured and cut off the sleeve.

Giving me some more t-shirt material for the rug that I plan on making down the road.

I then put the rough cut sleeves through my Serger. I didn't get a picture of this I just plumb forgot.

Lastly a bit of a hem on the regular machine. And voila 3 new to him short sleeved t-shirts.

The afternoon was spent working on my cross stitch. Sharing with you all how far along this project has gotten over the last few weeks.

Sunday Ramblings


Today we had a baptism during Mass. How to describe it? Something wonderful beyond belief. The child in question had 5 god parents and belonged to one of our new immigrant Filipino families. This is part of their tradition in the Philippines. Seeing the glow of those 7 candles helped me to realize that we all have to share the light of Christ during not only these 40 days of Lent, but throughout our lives.

We need to reach out to everyone and share the love of God. Showing each of the people we meet that they are truly deserving of His love and forgiveness. This is something I, myself have a problem with and will work on over this Lenten Season.

I made a new recipe today and Harvey loved it. This will go in our regular rotation as well.


We were supposed to have roast chicken for supper, but when I went to the freezer ....... none to be found. So I searched through cook books to find a recipe similar to a roast chicken and found this. It enabled me to use up a couple of packages of chicken from the fridge. I did not have any carrots either (my am I getting low in supplies) so I cut up celery and put that in to roast as well.

To my surprise this is a very tasty meal and does taste like roast chicken and stuffing (must be the sage in the recipe).

I will keep the celery in it and add carrots the next time I make it.

Sage Chicken and Potatoes

Cut up chicken weighing about 1 1/2 lbs
3 unpeeled potatoes (I used 4 small ones) cut up into 3/4 inch pieces
1 1/2 cups baby carrots
1 jar of gravy (I made my own)
2 tbsp Worchestershire sauce
1 tsp dried sage leaves (I used ground sage)
1/2 tsp garlic/pepper blend (I used 1/4 tsp pepper and 1/4 tsp garlic powder).

Spray a 13 x 9 pan with cooking spray. Preheat oven at 400 F. In baking dish, arrange chicken potatoes and carrots. In a small bowl mix remaining ingredients and pour over chicken and vegetables. Spray some foil to cover the dish (sprayed side down) and bake for 50 to 60 minutes or until juices run clear.

The best thing is I have enough leftover from tonight that we will be having another meal sometime in the upcoming week.
