Menu Monday

I am trying hard to get back into the swing of making regular posts. Even when I am feeling blah and like there is really nothing exciting happening. So I am going to post my weekly menu.

Monday

Mushroom smothered pork chops, rice and a salad (I was going to make asparagus, but think I will save that for the stir fry tomorrow).

Tuesday

We will be having some type of pork for the third night. I plan on using up the leftover pork in a stir fry (will put some asparagus in here as well as the usual stir fry veggies), Served over the leftover rice.

Wednesday

Soup and sandwiches. Thinking a package of the oriental soup mix I have along with some salmon salad sandwiches.

Thursday

Clean out the fridge. Pretty sure there will be stir fry leftover.

Friday

Tuna Pasta Salad. I think it is time to start my main dish salads and this is a fav of ours.

Saturday

Smoked beef sausages, potatoes, and salad.

Sunday

Roast beef, potatoes, and roast carrots.

Tonight I hope to get a bit of baking done. I am planning on a Chocolate Zucchini cake, and perhaps some more Rhubarb Bars. This should help with our sweet tooth for the week.

Winter Is Here

Today started off cloudy but there was no wind and no sign of snow. Yet by this afternoon snow started to fall. Not much at first and it was melting as soon as it hit the ground.

The temperature started to drop and by 5 pm this is what the outside looked like.
Now there is a lot more and it is still coming down. Looks as if winter is here to stay as our temperature is not supposed to get above freezing any longer this month.

This turned out to be the perfect day to get a few chores done around the kitchen (tomorrow is supposed to be the same way).

I pulled out the slow cooker and started to make baked beans.
This is what they looked like when I started, and here is the finished product.

Just waiting for them to cool down enough to put into the freezer. Yummy goodness to eat later on this winter.

Then because making beans did not keep me busy enough I started my Christmas baking.

I made this Almond Bark first.

Next it was on to Butter Tarts. Sorry there is no picture of these beauties. I made 3 dozen and stuck them in the freezer as quickly as possible. If I leave them out for any length of time Harvey has a bad habit of snacking on them.

This was a very productive day in the old homestead. I just love the way the house smells getting ready for the Christmas celebrations. Between times I get to do crafty things!!!

Week Is Almost Over

First I have to share the news that Kurt got his mortgage after a bit of paperwork and him losing his temper with the loans manager. Now everything hinges on the house inspection. That will be occuring in the middle of next week.

I had some frozen turkey from Thanksgiving and wanted to try something new. So I searched my cookbooks and came up with this Turkey Cheese Bake.

This is a picture of the finished product on the table waiting to be served. I think that the next time I make it I will add some chopped green peppers and chopped mushrooms to it. Other than that Harvey really enjoyed it. This is similar to a crustless quiche.

I am going to share the recipe with all of you.

Turkey Cheese Bake

4 large potatoes with peel

Water

Salt

Grated sharp Cheddar cheese (I used medium)

4 fork beaten large eggs

2 1/4 tsp dried parsley flakes

1/4 tsp dried thyme

1/4 tsp nutmeg

1/2 tsp salt

2 cups finely chopped leftover cooked turkey

2/3 cup half and half cream or milk (I used milk)

3 tbsp Mayonnaise

1 tbsp tomato paste

2/3 cup grated Cheddar cheese (either sharp or medium)

Cool potatoes in water and first amount of salt in a large uncovered pot for about 10 minutes or until partially cooked. Drain and cool. Peel potatoes and grate them coarsely into a medium bowl.

Add the next 6 ingredients. Stir and set aside.

Combine next four ingredients in a separate bowl, this is where I would add the chopped peppers (about 1/2 cup) and chopped mushrooms (same amount). Stir and spread evenly in the bottom of a greased 9 inch springform pan. Spoon the potato mixture over top. Spread evenly.

Sprinkle with the second amount of cheese. Bake at 350 F for about 1 hour or until golden and set. Cuts into 8 wedges.

Serve with a crusty bread and a salad.
