Menu Monday

Woke up to foggy skies today and no sun. While the temperature is warmer, it feels colder because of the damp. Still it does look as if the weather will be improving and perhaps spring is on the way.

Monday

Lentil soup from the chest freezer. I will make egg salad sandwiches as well.

Tuesday

Leftover roast beef probably made into a stroganoff type meal served over noodles with a salad.

Wednesday

Pulling a container of Lazy cabbage rolls out of the chest freezer.

Thursday

Clean out the fridge night. Whatever needs using will be used up tonight.

Friday

To break our Good Friday fast we will have the remaining cod fillets and some homemade fries.

Saturday

Up to Regina to spend some time with Kris, bringing him groceries, cleaning the apartment, and will more than likely bring something along for our supper. I think sausages would be nice.

Sunday

Still in Regina so will be making the turkey there along with potatoes, green beans, stuffing, gravy, and a pie (I need to decide and make the pie before we go).

There you have it our menu for this week.

Everybody have a wonderful day.

God bless.

Sunday Ramblings

This is the first time since I started dating Harvey, many moons ago, and before converting to Catholicism that I haven't been at Mass for what is the beginning of Holy Week. It seems so strange, no palms brought home to decorate with, no blessing, no larger community.

Yet, just like the first Christians we are gathered in our homes celebrating together. Separate, yet one in our beliefs and hopes. Sending our prayers upwards and onwards for healing not only from this virus that is costing us all so much, but for our world, that we may learn to walk humbly, that we will reach out to those in need, and in love to all those who need us.

My this Holy Week bring you all peace and joy. It is a time of reflection that we will probably never have again. Make use of it.

Everybody have a wonderful evening.

God bless.

Frugal Friday

It really isn't hard to be frugal right now, after all if one is following the rules set out by the various governments you are staying in or physically distancing yourself.

1.  Combined errands so that I did not have to go out very often.

2.  Taking long solitary walks for exercise.

3.  Using up leftovers from fridge and freezer for our meals.

4.  Hanging up at least two load of washing on the lines in the basement. Really looking forward to when I can actually use the outside lines.

5.  Using fabric scraps to make facemasks, and leftover yarn to fashion even more dishcloths.

Everybody have a wonderful evening.

God bless.

Thursday Tidbits

Today we all learned that this physical distancing might last until July or even longer!!! Scary thought indeed. The curve is not flattening as quickly as our government would like, still it is flattening a little in some of the provinces here in Canada.

The problem is that some people still are not taking this seriously. It is really hitting close to home right now for us. You see, when Kris had his first out of hospital appointment with his specialist, Harvey and I went shopping for him at the Superstore located near this doctor's office. Today I learned that an employee at that store tested positive for Covid-19. We were there well before the outbreak in our province and since it has been over a month since shopping there we should be safe. Still this just goes to show us how we need to be smart and be safe.

I was talking to my friend today (the one I usually have coffee with) and she told me her son and daughter-in-law are allowing their two children to visit with 2 friends. According to them this will keep them from sneaking out and trying to find even more friends. Say what!!! Then there is the pharmacist here in the city that allowed some teenagers to gather in her yard one evening. Sure they were sitting at the requested 6 feet apart, but what is that showing the neighbours. This woman should know better. Her excuse was that her son was going crazy. We are all going a bit stir crazy right now, but for goodness sakes as adults (her son should be considered an adult as well) we all know how important sticking to the rules are.

Kris had his appointment this morning and is healing nicely. His hip has not completely healed as of yet so the doctor still wants him to keep the weight off it, he also wants to see him again in 4 weeks.  His appointment was at the General Hospital in Regina and he said it was extremely quiet. He was shocked that it was not busier.

To get out onto the balcony at Kris's apartment you have to step over about a 9" heater and about the same down on the other side. Hard to do on crutches. He has asked Harvey if he could perhaps make a pair of steps so he can at least get outside when the weather improves. He figures on perhaps even working on his balcony for a bit each day. I can see being stuck inside day, after day, after day (he has been inside since February 12th) starting to become depressing. Heck if I could not get out for my walks every day I think I would be stark raving mad by now.

I did my shopping yesterday, but will be heading out to another store tomorrow. Turkey is on sale and I need to pick up a couple more things for Kris. Milk will wait until closer to the time we go up. We will be heading up on the 11th and enjoying Easter with at least one of our sons. Hopefully we will have a video chat with Kurt so we can at least see each other.

Everybody have a wonderful evening.

God bless.

April Showers????

I think Mother Nature decided to pull a fast one on us that live on the Canadian Prairies. Not the best of April Fools pranks as it has been snowing for most of the day. According to the forecast we could end up with almost 6 inches!! This after some beautiful spring weather.

One good thing about miserable weather though is that staying indoors and practicing physical distancing is so much easier.

I did go through my wardrobe today and have been pleasantly surprised. Those items of clothing that were a bit tight now fit just perfectly. In fact some of them are actually a bit loose which makes me feel very good. I am not going to alter anything yet as these are mostly winter things. I will wait until next fall to see if I can maintain or if I lose even more. Not much use in having to do something twice or to see the garments getting tight once again.

Kris sent me a text saying that he checked to make sure his cab ride was listed for tomorrow and it is. He promised to call and let us know what the doctor and the xray says. If he doesn't you may rest assured that I will be calling him at some point in the day.

Everybody have a wonderful evening.

God bless.

Thrifty Tuesday

This social distancing is making me more aware of what we have and what needs to be done to maintain it.

So in that vein I have been checking buttons and sewing on any that are loose, darning socks, fixing hems, and I even put in a new zipper (something I really hate doing and need more practice at).

I have made a few masks out of pieces of leftover cotton, and used more stash yarn to knit another little baby dress to give as a gift.

I pulled all the turkey carcasses out of my chest freezer and made bone broth today. I got 6 containers after condensing it and a bag of meat to be used in sandwiches and as cat treats (our cat is slightly spoiled). I managed to use some rather wilted celery doing this as well.

Tomorrow I plan on going through my wardrobe at some point and seeing what still fits and what needs to be altered. I have lost more weight through this stressful time (just don't feel like eating much) and making an inventory of pantry and freezers. I want to get the most out of what we already have before running out and buying even more.

Everybody have a wonderful evening.

God bless.

Menu Monday

This next while I plan on trying to use up a few things in the fridge freezer and chest freezer. Must make more room so that nothing is wasted.

Monday

Butternut Squash soup (container in the fridge freezer) and salmon salad sandwiches.

Tuesday

Leftover ham made into a casserole. Something new and interesting, with some leftovers for another meal.

Wednesday

A package of leftover chicken which will more than likely become Chicken a la King. Served on toast or maybe biscuits.

Thursday

Hopefully the remains of the casserole from Tuesday. I will add some tossed salad to this.

Friday

Comfort food night, Glace and eggs (kind of like deconstructed perogies or really heavy dumplings).

Saturday

Perhaps a clean out the fridge night.....or a Chef's Salad using up some more ham and some leftover chicken (saving some back from the Wednesday meal).

Sunday

Roast beef, roasted potatoes, roasted carrots.

I also plan on pulling out the chicken and turkey carcasses and making stock tomorrow. That will clean out a bit more space as well. At least until I package up the stock.

Everybody have a wonderful evening. God bless.
