Menu Monday

Well I think I am back to normal with my menus. Took awhile, but it sure is nice to feel organized once again.


Stuffed Chicken, leftover potatoes from our roast meal last night, and a salad.


Leftover roast beef made into a casserole of some sort. Served with the leftover salad.


Lemon chicken, noodles and a mixture of peas and carrots.


Clean out the fridge night.


Salmon casserole served with raw veggies and dip.


Baked pork chops, mashed potatoes, and beans. I might make a salad here as well.


Roast pork, roasted potatoes, roasted carrots and any leftover salad will be used.

  1. Yes, Jackie, there's something about organizing the menu that suggests a return to normal. My fridge still has leftovers in it - egg salad (from the road lunch for the 4hr return trip on Fri for mom's carpal tunnel release), corn chowder (after the last of the corn was picked from the garden), cheesy corn risotto (a potluck contribution on Sat), spinach artichoke tortellini (time to use up the opened jar of artichokes). I'll be out for meals the next 3 days so it's possible those leftovers may have to be frozen before they reach their best before date.
