Menu Monday

 

Well the heat has arrived and after working out in the garden my meal plan has definitely changed for today.

Monday

This was supposed to be pizza night, however it is much too hot to turn on the oven. So I will pull out the leftover salad, boil a couple of eggs (4), thinly slice the ham I took out and make a main dish salad. 

Tuesday

Smoked sausage, potatoes, and carrots done on the BBQ (supposed to be even warmer tomorrow).

Wednesday

Baked Spaghetti (even though it will be warm I am hoping the air conditioning has caught up by then) even though I will be using the toaster oven and not the big oven. I may try and slip some garlic bread in as well.

Thursday

Soup and sandwiches. I might just make grilled cheese on the top of the stove. 

Friday

Tuna pasta salad. Heat will still be sticking around so another main dish salad is going to happen rather than a Tuna casserole.

Saturday

Stuffed chicken, cauliflower cheese, and probably a salad.

Sunday

It was supposed to be warmed up leftover ham, but I think I will get Harvey on the BBQ once again and do some Bacon Wrapped filets, as well as tin foil potatoes and carrots.

So there you have it. Changing meals on the fly, and combating the heat.

Menu Monday

 

I went shopping today for all the great meat deals available this week. We are now pretty much stocked up for many weeks and months now. Except for roasts, whole chickens and hams. Which will be easier to find sales on. I am now hoping not to have to go shopping at all until probably the middle of the first full week of May. Keeping my fingers crossed for that.

I will also be working to get more cleared out of the chest freezer. There are lots of ready meals and soups that need to be used up and planting season is coming up. This is true even though the forecast for later this week is calling for snow. Rain first of course.

Now onto this weeks menu.


Monday

Leftover Jambalaya from Saturday and a salad.

Tuesday

Pork chops, mashed potatoes, mixed veggies and any leftover salad.

Wednesday

Sweet and sour meatballs, rice and a tossed salad.

Thursday

Soup and sandwiches. I will probably make egg salad sandwiches. 

Friday

Fish burgers, the remains of the tossed salad, and probably pickles and cheese as I have pickles that need to be used up.

Saturday

Small sausage casserole and as there are loads of veggies in this just some bread or buns to go with.

Sunday

A Roast beef, roasted potatoes, roasted carrots and a coleslaw to use up the cabbage.


Some of these meals are leftovers in the fridge freezer, some are new and some are using up things from the pantry and chest freezer. 

I am working on using things up even though I am stocking up at the same time.

Menu Monday

 

Wow, it is the middle of the month, or close to it at any rate. One would think more April showers would be happening. While the next three days will have some rain, soon enough we will have lower temperatures and some of the white stuff. Really the type of weather that makes a person want to stay inside. 

So what are we eating this week. I am using a few things up from the fridge freezer and probably one item from the chest freezer. It all depends on if there are enough leftovers from one of my meals.

Monday

Ham and Pasta Bake. This has some extra veggies that I put into the casserole.

Tuesday

Sweet and Sour Ribs and I will pull out a package of frozen leftover rice from the fridge freezer. I will make carrots as a side dish. We do love carrots in this house.

Wednesday

Leftovers from Monday.

Thursday

Leftovers from Tuesday if there is enough for a meal. I may end up pulling a ready made meal from the chest freezer. I may make a salad.

Friday

Salmon patties, homemade hashbrowns (from the chest freezer), and peas. Leftover salad.

Saturday

Jambalaya which will use up some of the smoked garlic sausage from the fridge freezer, the last of the shrimp, and I will make another salad of some kind.

Sunday

Roast chicken, roast potatoes, and roast carrots. Served with any leftover salad.


This will take care of a few items in the fridge, fridge freezer, and the chest freezer as well.

Menu Monday

 


A new week has begun with new ideas for using items up, or at least using things up in the meat freezer and other leftovers. 

Monday

Baked pork chops, leftover mashed potatoes fried up with some onions, and leftover fresh veggies sliced with dip.

Tuesday

Using up some Cream of Celery soup from the chest freezer and serving it with grilled ham and cheese sandwiches, or perhaps tuna melts on buns.

Wednesday

Chicken Parma along with some spaghetti in tomato sauce. I will probably do some frozen peas up as well.

Thursday

Roast pork, roasted potatoes, roasted carrots and gravy. The leftovers will be saved to be used in another meal. 

Friday

Scrambled eggs on toast.

Saturday

Leftover pork roast made into a stir fry and served over rice.

Sunday

A bag of leftover ham from the fridge freezer. I will warm it up, make boiled potatoes, and carrots to go along with that. 

This will see a bit of using up of things in the fridge freezer, in the meat freezer, and the chest freezer as well.

Menu Monday

 

I am starting the first full week of my clean out the fridge freezer challenge to my self. Of course today I am using up the leftovers from our Saturday meal made from the bag of frozen ham I pulled out.


Monday

Leftover Ham Pasties and leftover salad from Sunday.


Tuesday

Vegetable soup and egg salad sandwiches.


Wednesday

The bag of frozen chicken meat made into a casserole. Serving with leftover salad and some asparagus.


Thursday

A package of the leftover pork roast made into another casserole. If the salad is all gone by this time I will make coleslaw. Also serving asparagus with this I hope.


Friday

Tuna patties, coleslaw and perhaps one of the noodle mixes that need using up.


Saturday

Leftover Chicken casserole, salad.


Sunday

The leftover Baked Spaghetti and probably coleslaw (lots of cabbage that needs using).


I am almost tempted to go and visit with Kris this weekend instead of next as the weather might be a bit snowy that weekend. This would however mean changing menu plans for a couple of days. Not a bad thing, but one that would probably mean not using things up as quickly as I would like. We shall see, I may talk to Harvey about this idea in a couple of days.

Menu Monday


 I am just exhausted, probably from the dentist appointment, picking up the car, and finding out there was still something going wrong with the vehicle. Silly engine light would not go off. So it was back to the dealership, and waiting there for them to discover what was wrong.... Hoping that they would be able to fix it, because if not we wouldn't get it in again until the 21st of March!!

Well after about an hour there was a loose connection found from the battery. It is fixed and on the drive home the check engine light did not come on. Keeping my fingers crossed that it does not come on again tomorrow.

On with the menu plans which will contain 2 days of using up some of the items in the fridge freezer basket.

Monday

Baked spaghetti and garlic bread.


Tuesday

Lazy Cabbage Roll casserole from the freezer.


Wednesday

Stuffed shells and a salad.


Thursday

Leftovers from Monday and leftover salad.


Friday

Eggplant Parma, garlic bread.


Saturday (the first day of clearing out)

Ham Pasties.


Sunday

Pork cutlets, mashed potatoes, salad or perhaps frozen mixed veggies. 


It is time to make something for desserts as well, so perhaps unbaked cookies, or puddings.

Menu Monday

 


Strange as it seems, I had to redo this weeks menus once again. There is reason behind my madness, it just seems as if I can not for the life of me only cook for two people. So there are lots of leftovers, and probably more before the week is over. I may have to figure out a biweekly making of a menu... Yet I would probably still be changing things around.


Monday

I am using some fake crab and making a quiche. Doing that will give us two more meals, which of course will need eating later this week. I will probably have the leftovers for supper on Thursday and forgo the soup and sandwiches. Serving it both times with a salad. Tonight we will finish off the kale salad and I will be making a tossed salad on Wednesday so will have that again on Thursday.


Tuesday

There is leftover taco meat, so I will be making Nachos for supper using that up as well as the remainder of the toppings I cut up for our soft tacos.


Wednesday

I pulled a container of meaty spaghetti sauce out of the freezer so it will be spaghetti with meat sauce and a tossed salad. This is one of the planned meals for the week.


Thursday

The last of the quiche and the remains of the tossed salad. 


Friday

Back to what I planned, I will be making a salmon casserole and will make corn as the side. There are already peas in the casserole as well as mushrooms.


Saturday

Baked spaghetti, and a side of coleslaw. 


Sunday

The roast chicken that I was going to make a few weeks ago. The bones will be set aside for bone broth. Serving this with roasted potatoes, and the remains of the coleslaw.


Breakfasts will be toast, oatmeal or yogurt. I am pretty much the only breakfast eater in the house. Lunches will be any leftovers, and the usual sandwiches.


I made a spice cake which will be served for dessert. Not sure if I will ice it or make the caramel sauce that my Mom always put on her spice cakes.


Off to get started folding clothes and then preparing the quiche. Then to visit all of you while the quiche is cooking.

Menu Monday

 


I only did two weeks of menus this time (and a day when we will get back). Hopefully I can follow these without too many changes.


Monday

BBQ Ham Steak, tinfoil potatoes, green beans, and cream cheese stuffed, bacon wrapped jalapeno peppers. 


Tuesday

Soup and sandwiches. I brought up a container of Broccoli Cheese soup and will make tuna sandwiches to go along with that.


Wednesday

Hot dogs, baked beans and probably some macaroni and cheese. Then of course the sliced tomatoes and cukes.


Thursday

Chili and toast. Once again using a container from the freezer.


Friday

Lazy perogies, sliced cucumber and tomatoes.


Saturday

The last two smoked hamburgers from the freezer, tinfoil potatoes, and sliced cukes, tomatoes and the fixings for the burgers.


Sunday

Beef Roast, roasted potatoes and roasted carrots. Then as another side the never ending sliced cukes and tomatoes.


I have been using up the leftovers in the fridge for my lunches and there are just a few items left to use. Probably be some from this week, but I will keep working on getting things cleared out.

Kind of Menu Monday

 


I have a sort of menu for this week, but once again it will consist of using things up.


Monday

Meatloaf, mashed potatoes, and baked beans.


Tuesday

Leftover Beef Casserole from Sunday.


Wednesday

Now this will be the leftover filling from the Beef Casserole made into a stew. I will be making dumplings to go with this. Love me some dumplings.


Thursday

I hope there is leftover meat loaf, if not I will do something with some ham I have in the fridge freezer and the puff pastry sheet left in the box.


Friday

Fish fillets, mixed veggies and fried leftover mashed potatoes (or I will make some more). 


Saturday

Leftover stew, served on slices of bread.


Sunday

Stuffed peppers from the big chest freezer downstairs. 


This should clear out most of the fridge freezer and allow me to work a bit more on the chest freezer. I do have some hamburgers still in the fridge freezer, so those will be on the menu next week.


I did not sleep well the last two days, and while I hope to visit you all later tonight, it may not take place until tomorrow.

Menu Plan Monday


 Back to regularly scheduled posts today. 


Monday

Leftover chili on pasta. Serving this with cucumber slices and cherry tomatoes.


Tuesday

Leftover chicken made into a casserole. Depending on how many veggies I can add to the casserole, I may serve a side of mixed veggies as well.


Wednesday

Leftover ham from the freezer made into a casserole. 


Thursday

Leftovers from Tuesday.


Friday

Soup and sandwiches. I will make chicken stock then turn some of that into Chicken Vegetable Noodle Soup, served with either salmon salad sandwiches, or grilled cheese.


Saturday

Leftovers from Wednesday.


Sunday

Roast Beef, roasted potatoes, roasted carrots, and probably a coleslaw to use up the remaining cabbage. This could end up being a Brisket meal however so stay tuned.


Lunches will be leftovers from meals or a sandwich.


Breakfasts will be yogurt, cereal or toast.

Menu Monday

 


A new week has arrived. One would think that my fridge freezer would be cleared out.... Not a chance. So once again we will be making meals around what is in that freezer. With the occasional meal from something new. 


Monday

I have pulled the last container of chili out of the freezer downstairs. Serving it with toast.


Tuesday

A bag of leftover chicken will be turned into something wonderful I hope. I am going to try and find a new casserole recipe. There is also a bit of salad to use up.


Wednesday

Cream of celery soup from the freezer downstairs and I think I will make egg salad sandwiches.


Thursday

Leftovers from Tuesday. I will make some coleslaw to serve with the casserole.


Friday

Fish Fillets, hashbrown patties, and the remains of the coleslaw.


Saturday

Lazy Perogy casserole. 


Sunday

Butter chicken, rice, mixed veggies.


So this will clear out a package of chicken from the fridge freezer along with the remaining hashbrown patties and the remaining fish fillets.

The chili and soup are pulled from the chest freezer so clearing a bit more of that up as well.

Menu Monday

 


A few switches in this week's menu plans. Nothing big, just changing a few days around in order to use things up.


Monday

Honey Garlic Sausage and baked beans. Served with homemade bread.


Tuesday

Leftover Butter Chicken on leftover rice. I think that this time I will use up the broccoli in the crisper.


Wednesday

Chili and toast.


Thursday

I plan on using up the leftover roast beef, and the beef broth and making soup. I will make grilled cheese sandwiches as well. The leftover soup will be frozen in containers to use at another time.


Friday

Perogies, sour cream, and fried onions.


Saturday

Leftover Chili, this time over pasta.


Sunday

Roast pork, roasted potatoes, and roasted carrots. 


So, I will have used up some leftovers in the fridge as well as some things in the crisper. Also clearing out a bit more in the freezer.

I need to think of some kind of dessert for the rest of the week and will do so tomorrow.

Menu Monday

 


I had to change my menu for this past Sunday....Can you believe I actually ran out of whole chickens!!! Hopefully there are some for sale this week. So instead, I made a beef roast in the slow cooker. Was it ever good. There are a few slices left for a meal later on and that package is residing in the fridge freezer.


Monday

Spaghetti and meat sauce. 


Tuesday

A container of Eggplant Parma from the fridge freezer.


Wednesday

Baked spaghetti. Perhaps served with some garlic bread.


Thursday

Pork chops, mashed potatoes, and green beans.


Friday

Pancakes, or breakfast for supper.


Saturday

Leftover Baked Spaghetti, and more garlic gread.


Sunday

Roast chicken, roasted carrots, and roasted potatoes.

The carcass of the chicken will be saved to use the next time I make stock/broth.

Menu Monday


 

I redid my menu for this week in order to use up more of the leftovers. We finished last week using them up as well. Where on earth do they all come from!!!!!


Monday

Leftover Baked Spaghetti.


Tuesday

Leftover Ham Pasties along with a tossed salad.


Wednesday

Hotdogs, leftover salad.


Thursday

Soup and sandwiches (I still have a couple containers of turkey stock in the freezer).


Friday

Lazy perogies. 


Saturday

Leftover Ribs, mashed potatoes, mixed veggies and perhaps another salad.


Sunday

Baked Ham, baked potatoes (perhaps a potato salad instead) and the remains of the tossed salad from last night. The ham will be done in the electric roaster which will be put outside.
