Menu Monday

A bit late today, but as the saying goes better late than never.

Menus got a bit mixed up last week so I have a carry over.


The salmon casserole that we were supposed to have last Friday. Served with raw veggies and dip.


Leftover ham made into a casserole. Still eating casseroles as we are still in the midst of winter here on the Canadian prairies. Serving with raw veggies and dip.


Noodle soup and grilled cheese sandwiches (though tuna melts sound pretty good too).


Leftover stew.


Breakfast for supper....French toast.


Meatloaf, mashed potatoes, peas and carrots.


Roast beef, roasted potatoes, roasted carrots and roasted peppers (may even throw in some tomatoes).

  1. Menu planning went off the rails for me last week. I had company at the beginning of the week, there were leftovers, then nights away. The fridge is now clear of leftovers so I will start fresh. I'm dealing with an upper respiratory infection. Today is the first day that I can actually taste the garlic I've been eating!
    Mon - roast chicken & sautéed zucchini/onions
    Tues - tikka masala naan bread with leftover chicken
    Wed - lentil, kale, sausage soup
    Thurs - quesadilla w/ chicken
    Fri - leftover lasagna serving from the freezer
